Lee’s Famous Banana Blueberry Pancakes
These are my favorite pancakes especially for dinner,
especially when you have very ripe bananas.
Ingredients
2 cups King Arthur white flour
2 cups King Arthur whole wheat flour
1 teaspoon salt
3 teaspoons sugar
3 teaspoons Baking powder
2 eggs, beaten
½ stick melted butter
2 ripe bananas mashed (the riper, the better)
1 cup fresh blueberries
3 cups whole milk (more if you want thinner pancakes)
Preheat your griddle to 350 degrees
Mix dry ingredients thoroughly
Add the egg, milk, melted butter to the dry mix
Then mix the bananas, add more milk if needed to make a smooth batter
Mix the blueberries with a food scraper to incorporate into the batter
Use a soup ladle to make even size pancakes
Cook until bubbles appear, then flip to finish cooking
Add butter and maple syrup; serve with bacon (try a thin slice of cheddar cheese)
