Lee’s Home Fries
I love making home fries, not only for breakfast, but great for dinner too!
Ingredients
2 large Yukon Gold or Russet baking potatoes, diced
1 medium size onion brown or white, chopped
½ lb. slab bacon chopped or sliced into small pieces
Olive oil, fresh cracked pepper
Oregano, parsley, basil, thyme (1 Tbsp. ea)
Chopped red or green peppers or both
In a large nonstick frying pan, cook the bacon half way.
Add the diced potatoes and diced onions and chopped peppers.
Add your herbs and stir.
Cook until the bacon and potatoes are done, only add the oil if needed, the bacon fat should keep the mixture from sticking; no need to add salt, the bacon has enough to flavor the dish.
Great with steaks, chops, or any meal along with breakfast dishes.
