Tabooley Garden Wheat Salad

A simple and healthy salad

 

2 cups Bulgur (fine or medium) Whole foods

4 bunches Flat parsley

4-6 ripe tomatoes or 12 plum tomatoes

2 bunches green onions

4 Lemons

Sprig of fresh mint

Olive oil

Romaine lettuce leaves

 

Start by soaking the Bulgur in water (4-6 cups)

Chop parsley, green onions, mint and tomatoes and place in a large bowl

Combine soaked bulgur and veggies

Add the juice of the lemons, salt and pepper to taste

Add olive oil (1/2 cup)

Mix well and refrigerate

Serve on lettuce leaves with your favorite meat especially lamb shish kabob
