Lee’s Roasted Garlic Dressing

2 heads of garlic

Butter

Extra virgin olive oil

Balsamic vinegar

Juice of 1 lemon

Parsley

Basil

Salt & pepper to taste

 

Start by roasting the heads of garlic in aluminum foil; add some butter and place in your oven for an hour or until heads are soft when you squeeze them.

Squeeze the garlic into a bowl, mash them into small pieces

Add olive oil, about 1 cup, juice of 1 lemon, ¼ cup Balsamic vinegar, chopped parsley, chopped basil, salt and fresh ground pepper to taste.

You can add more herbs like oregano, thyme, cumin, rosemary to change it up a bit.

Keep in fridge up to a week.
