Lee’s Marchigiana Salad
This is one of my favorite garden salads.
You can use any kind of lettuce, or a mixture of lettuces.
Ingredients
1 head Romaine lettuce, cut up
½ head Iceberg lettuce, cut up
1 Cucumber, sliced and deseeded
½ Red onion, sliced or julienned
¼ cup Red wine vinegar
2 Garlic cloves, chopped fine
1 bunch chopped flat leaf parsley
½ cup extra virgin olive oil
½ cup Sicilian black olives
Salt and pepper to taste
Mix well in a large salad bowl and serve cold.
Add native tomatoes in season or grape tomatoes when they are available and ripe, but never refrigerate the tomatoes .
